Claire Criscuolo graduated from the University of Bridgeport and is a registered nurse. Her love of wholesome foods, along with her desire to create exciting, healthful, home-cooked meals lead her to the restaurant business only months after graduating from college. Armed with the recipes she culled from a family of marvelous cooks (Claire's Mom continues to maintain a presence at her daughter's restaurant) she and her husband Frank founded Claire's Corner Copia in September 1975. Now, in its thirty-fifth year, this vegetarian restaurant continues to thrive at its original location across from Yale University and the historic Green in New Haven Connecticut. [

Over the years Claire's Corner Copia has received numerous, glowing reviews published both locally and nationally, including a review by Patricia Brooks for the New York Times. This popular restaurant continues to win awards including the most recent year - 2009, Best Vegetarian Restaurant, Best Desserts, Best Soups, from the readers of the New Haven Advocate, and Best Quiche and Best Vegetarian Restaurant from the readers of Connecticut Magazine. Claire's Corner Copia is listed as one of only two restaurants in New Haven "Not to be missed" in the Yankee Magazine Guide to Travel in New England, and the 2002 Michelin Green Guide to New England. In 2009, our Lithuanian Coffee Cake at Claire's Corner Copia was listed as the 50 things to eat before you die - in Connecticut Magazine.
Dedication to quality and community has always been the mission at Claire's Corner Copia. The tremendous success of this restaurant has allowed Claire and Frank to give back to their community. Thousands of dollars each year are collected, earned, and given to a myriad of causes. They include, Alex's Lemonade Stand, Children in Placement, Leukemia Society, St. Jude's, Connecticut Food Bank, and dozens of others. Claire has received the Cy Flander's Award for her work with people with disabilities, an Award for Outstanding Community Involvement from Aids Project New Haven, the 2001 Partnership Award from Children In Placement, the 2002 Distinguished Graduate Award from East Haven High School, Small-Business Person of the Year from Business New Haven, 2003 Restaurateur of The Year by the Connecticut Restaurant Association- a first in the country for a vegetarian chef! In 2005, Claire became an Elm-Ivy Award winner for her contribution to increased understanding and cooperation between the City of New Haven and Yale University.
Claire is an Associate Fellow at Calhoun College of Yale University. She is the author of three cookbooks, Claire's Corner Copia Cookbook, Claire's Classic American Vegetarian Cooking, and Claire's Italian Feast, published and distributed nationally by Penguin. Claire's recipes have been published in the New York Times, Women's Day, and hundreds of other newspapers across the country. She has written articles for Great Life Magazine, Veggie Life Magazine, and Gourmet Retailer. She is a food columnist for the New Haven Register and her column My Vegetarian Kitchen can be seen on the front cover of the food section on Wednesdays, bimonthly, where she is an ardent supporter of local farmers.
Claire has been a guest chef on the Television Food Network, the national PBS shows Home Cooking with Amy Coleman, and Healthy Connections, Good Morning Texas, and has made numerous appearances on radio shows throughout the country and in Canada. She has been a guest teacher at the Culinary Institute of America, ICE, and in cooking schools in thirteen states. She has been a guest author/chef at the Heublein Grand Chef's Festival, the American Institute of Food and Wine, The Fancy Food Show, Natural Products Expo, and the Working Lands Alliance., the Book and the Cook, and the Texas State Fair. She has served as an expert on panels for the Natural Products Expo, NAACP Health Fair, NASFT, and the Massachusetts Association of Professional Food Service Directors. Today, she consults with food manufacturers within the organics industry. In 2009, she presented on a panel and a workshop for the Connecticut Women's Health Conference.
Claire is a member of the by invitation only, Les Dames d' Escoffier, is a member of Chef's Collaborative, Slow Foods, and NOFA, where she was awarded the Person of the Year in 2008. In 2005, Claire and her husband opened Basta Trattoria, (right next door to their beloved Claire's Corner Copia) a Sustainable and Organic restaurant specializing in fish and seafood, prepared and served in the classic Italian tradition.
